a guy that I've been talking to for a couple months wrote me this short poem: Truthfully If you were the sun I’d continue staring even tho I’d go blind, as your beauty overcomes the sense of pain I shall feel just to see you. What does he mean by this?

He's trying to say your beauty blots out the pain he'd experience losing his sight by being blinded by your beauty. It's overdone and overwritten, but he's trying to say how great you look. He needs more poetry writing lessons, but he's sincere!
