Why would a guy start watching my social media stories really fast after we hung out, before he didn’t bother?

It sounds like you must have made a good impression on this guy when you hung out! For him to suddenly be watching your stories so quickly after, it definitely seems like he's more interested now.

I'd say take it as a good sign - he's paying more attention now! Don't overthink it, just keep doing your thing on social media. And maybe casually bring up hanging out again sometime to see where he's at. Sounds like you've caught his eye, dude! Keep doing whatever you did to impress him.
