Why would a guy change tone down flirting behaviour with a girl after she said she liked him?

If there’s a noticeable behaviour from a guy flirting with you eg prolonged eye gazing, checking you out, getting nervous and a sudden change after you tell him you like him, still super friendly, but without the intense flirting, more like relaxed, what does that mean?

How can he change his behaviour just like that?

The flirting is to get your attention and to see if you like him. You do so the need to flirt is no longer present. If you ask him, you seem disappointed, to carry on then perhaps he can do it in a more organic way and build some kind of mutual behaviour. You too can initiate this kind of communication and that is going to be a bonus for him.
