Do you gain weight when eating over calorie limit? How can vegans or people on raw food diet eat so much without weight gain?

People always say that if you go over your calorie limit you put on weight. It does not matter if you eat healthy foods or bad ones. So why are vegan and people on the raw food diet so skinny and eat about 3,000 calories per day without putting on weight?
For example Freelee The Banana Girl on YouTube has amazing body, is healthy and fit but eats soooo much.
She says that it does not matter how many calories you eat. You can eat way over you limit with fruits such as banana and rice and brown pasta and you won't gain weight.
I don't know what to believe.
Do you gain weight when eating over calorie limit? How can vegans or people on raw food diet eat so much without weight gain?
