I'm not technically a vegetarian but the only meat I eat/like is shrimp and crab.
In a day I usually eat Chocolate chip waffles with peanut butter on top, with a fruit smoothie. You can drink/use Almond milk still, right? Banana smoothie with Almond milk is so good.
Egg salad sandwich or on green leaf lettuce with carrots or celery and a little ranch dressing. Sometimes i'll just make a grilled sandwich, with panini bread, grilled mushrooms, onions, bell peppers and feta cheese (maybe you could find a cheese substitute if you have to).
Shrimp or just plain vegetable spaghetti is really good. Vegetable Gumbo is so good. Jambalaya with just vegetables. I've made Vegetarian Lasagna. I've been wanting to make Eggplant Lasagna, it looks really good but I haven't tried it yet.
Black bean enchiladas with some cheese and ranch sauce. There should be a certain type of cheese you can get for vegans/vegetarians, I think?
Vegetable Curry is really good too. Vegetable Alfredo would be good too. I make tacos with black beans instead of meat.
Southwest Salads are also good if you like spicy food. Green leaf lettuce, tomato, black beans, corn, you can get these www.mrscubbisons.com/.../...ortilla_strips_new.png tortilla chips to go on it as well. With southwest or ranch dressing.
I like to take french bread and make vegetable pizzas with it, tomato sauce, black olives, tomatoes, mushrooms, bell peppers and cheese.
You could try Zucchini and Squash also. I actually looked up some videos on how to cook it good from YouTube lol
You can also buy veggie burgers, some of those are actually good.
Potatoes with vegetables/broccoli and cheese is always a really good side dish to your dinners or a salad with corn and black beans. Sweet potatoes are also really good. Also pea salad and potato salad is really good. You said you gave up dairy but is there a mayo substitute you can get? I'm sorry I don't know much about it.
Soups are also really easy and good to make. Vegetarian chili is also really good.
Potato soup. Tomato soup. Biscuits with white pepper gravy. Carrot soup.

Two of my housemates are vegetarians, one is on a meal plan through our university though so I don't really see what he eats much though. I do know he snacks on nuts a lot.
My other housemate gave me this really great recipe:
Vegetarian Curry -
ingredients:
coconut milk (1 can)
sweet potato
1/4 large onion
1/2 cup of lentils
green beans (broccoli or a pack of frozen snap peas)
jar of curry paste (try 1/3)
olive oil
- put large saucepan on stove, medium heat with olive oil
- cut potato into small (1/2 inch) cubes add to pan
- while potato is cooking, cut onion into similar sized pieces and greens if need chopping
- once potato is slightly soft, add can of coconut milk, lentils, curry paste, and onion (cover and let cook until lentils and potatoes are nearly done, stirring occasionally)
- when nearly done, add greens, stir, cover again
- serve with rice and enjoy!
And my other housemate who is dating a vegetarian guy gave me this recipe:
Vegetarian Chilli Slow Cooker -
ingredients:
onion
carrots (baby)
chickpeas
red beans
diced tomato
black beans
crushed tomato
garlic (2-3 cloves)
tex mex taco seasoning
--cook on low a minimum of 4 hours
In general, good stuff to use would be lentils, quinoa, tofu, and chickpeas.

Easiest way is to eat tofu, soy and other kinds of vegan "meat" products. But not very healthy. Get some spices (tumeric, ginger, jeera) and herbs (basil and similar herbs, I don´t know their names), cook vegetables, most what we eat is Indian food, because India is the origin country of vegetarianism and vegetarians are a majority there. Vegetarian diet is not about getting lots of protein. You can eat vegetables with rice and if you use proper spices, it will taste awesome. I can give you some of my favourite vegetarian/vegan recipes if you like. I was born vegetarian (no meat, no eggs). Vegetarianism is about combinations of proper vegetables and proper spices, but the result is worth it.

If you can't have cheese or tofu, it sounds like beans are going to be your main source of protein. Or can you still eat fish?
It's not much, but here's my recipe for spaghetti sauce :)
1 can crushed tomatoes
Minced garlic
Crushed red pepper
Salt and pepper, to taste
Put a saucepan on medium-low heat. Add enough vegetable oil to coat the bottom of the pan, then add the garlic (I don't measure lol.. maybe 1 heaping tablespoon). Sweat the garlic and be careful not to burn it. Also add the crushed red pepper at this time - I use 1 teaspoon but you can use more or less depending on how spicy you like it. Once the garlic is fragrant, add the can of tomatoes and turn the heat up. Heat through and add salt and pepper to taste.
I could eat spaghetti every day, so this would be my answer if I had to go vegetarian :) But I recommend going on Google and searching "simple vegetarian meals." Good luck!I'm vegan, used to be vegetarian. I used to eat thing's like greek yogurt with cereals, fruits and some nuts, sometime's a smoothie, oatmeal with peanut butter and fruit. Lunch could be a veggie burger with a salad, Pasta salad or pasta with sauce, peanut butter and jelly, " fake meat " with sandwich toppings and chips, dinner could be the same thing's listed as lunch. There are so many vegetarian and vegan food's!
Literally anything without meat. It's not that hard. It's not like you're a vegan.
Pastas, rice, potatoes, salads, yogurt, nuts, fruit, bread, cheese, vegetables.
You can make many entrees with those foods.You can eat eggs, oatmeal, toast, yogurt for breakfast. Lunch can consist of salads, rice bowls etc. With fake meats and or just heaps of veggies, dinner can be around the same and soups. It's really not that hard it's just important to be eating a lot and getting your protein in from nuts, grains and eggs if you decide to eat eggs.
