The amount of weight you gain varies on a number of factors. It is widely believed that eating an extra 3,500 calories over the course of the week will lead you to gain one pound. Or conversely, current your diet by 500 calories each day should result in a 1lb weight loss in a week.
I will say that eating 3,500 additional calories in one day is very likely unhealthy to do. Unless you are in serious training for an athletic competition, that additional caloric intake can send your body into shock, and could cause a lot more problems than any weight you might gain that day. Also, the amount of calories you burn over the course of the day factors in as well, which is why I mentioned heavy exercise or training above.

There are doctors, tests, analysis, studies... nutritionists and registered dietitians, workout instructors, if you need help seek help.
Count your macros instead of your calories. If you’re looking to gain weight concentrate on your macro intake and make sure it’s more than what you’re burning in a day. But don’t over feed and eat whole food meals. Not junk.
