No, you won't gain weight from eating once or twice a day. The only way you'll gain weight is from eating more than what you burn weekly. Many people (me included) practice intermittent fasting and some people find eating one big meal per day or eating all their food within a few hours works best for their fat loss. From what you've described you're probably losing weight as you're eating so little everyday and you're burning a lot of calories being on your feet all day. Is it unhealthy though? Yeah. Fast food has little nutrients, high sodium and sugar and you're not getting enough protein to sustain muscle growth. But I highly doubt you're gaining weight. Maybe you could try meal prepping?

I wouldn't eat the food there. Mcdonalds was my first job and i remember what hell that was like. You'll gain weight no matter what if you eat the shit there. Bring your own food if you need to eat on your breaks. The fact that they made me put a pound of sugar in their sweet tea was repulsive
I wouldn't eat that crap, even if they paid me extra to do so. Our bodies are unique, one time only temples. To put that crap inside of it is an insult to it.
That could well be related to your chronic fatigue since you aren't getting any nutritional benefit from that food. It's just empty energy. Your friendly bacteria will also take a dive and all of the nutritional / trace mineral deficiencies will cause long term problems.
I could fix your chronic fatigue in less than a week I bet. Sometimes you gain weight from eating too much, as well as not eating enough (starvation mode holding on to fat).
Carbs, fat, sugar and protein digested in one go is going to cause you fatigue.
