Hypnotism is real, but probably not what most people think. I've never seen a stage show, but stage shows are probably BS. That doesn't mean hypnotism is not real though.

I know how to hypnotize someone, but I have never tried it and probably would suck at it without some practice.

Hypnotism is basically a state of hyper suggestibility. If you think of "peer pressure", it is a form of suggestion to do things the person would not do on their own.

It's also related to a person doing something that really pisses you off. Then you can't stop thinking about it even though you want to stop. Someone else caused you to think things and react in a way that is largely beyond your control.

A hypnotist takes advantage of this. They put you in a state where they can suggest things to you without you thinking it through.

The stereotype swinging watch is an anchor for your thoughts. There is nothing special about the watch, it's just something to focus on. You focus on the watch, and use it as an anchor. Whenever your thoughts stray, you bring your attention back to the anchor.

While you do this, the hypnotist talks. Your focus is on the anchor, and drawn back there whenever your thoughts stray. So you are not focused on what the hypnotist is saying, but on the watch. Ideally the hypnotist will use a calm quiet voice that kind of floats in the background, without drawing your attention from the anchor.

If the hypnotist can get you to focus enough on the anchor, then the hypnotist can plant thoughts in your head that are not your own. If the thoughts are hideous, or completely different than your normal thoughts, it probably won't work. If the thoughts are something that you would not normally think, but are not horrible, you simply accept it without thought. Like, why not?

If you are focused on the anchor, you are not asking why. So why not? Is it really going to hurt to do as the hypnotist suggests? Probably not. So you just do it.

The anchor is closely related to the focus used in some types of meditation. For example focusing on a candle flame. When you are focused on the anchor, you are less likely to get carried away with all the background noise in your head. You are focused on the anchor, not the deadline at work tomorrow, or the bills that need to be paid. It can be very calming.
