I expect a loyal and dutiful wife would be working with the elves to prepare for the next year’s Christmas. Cleaning, reorganizing and retooling the workshop and all has to be accomplished in one day if they want to maintain peak productivity during the rest of the year. That’s probably when they do a lot of their hiring and orientations too. Man! Santa just couldn’t possibly do it all alone. If he’s not married, he’s got a real ride or die homie holding him down.

Santa is a title not a name, it's a variant of Saint. Thus Claus must be his first name as that's what saints go by. Hence his wife cannot be Mrs Claus but go by her husband's secret surname. The only place where Santa is a first name is Latvia and it's a girls name.

But what does she do? Well it's only one night and I'm sure she spends it playing games with the elves.
