What is a thoughtful birthday gift for a 35-year-old male acquaintance?

I don't know him well, but just a few things about him. His mother is giving him a birthday party and has invited me.

- knives... moreso if he is into grilling, a really good knife or two are always appreciated

- if he likes PC's and stuff... get him a set of True Spec cables from the LTT store

- gift cards, from a really good Steakhouse in the area

- if he is into soccer... the World Cup is coming, so a monthly subscription for whichever service is streaming it

- a good'ol Whiskey bottle... with a "proper" Whiskey glass too

Does he have anything that he loves doing or any hobbies or anything like that that might give you a clue as to what to get for him? If you really can't think of anything, then money or a gift card is always a good idea.
