Read them psychologically. Find out what comprises them, who they are at the present, and how they became that way. Then make fun of and predict how they came into the sorry state that they are in.
Example:
Start with something simple. Let's choose failed relationships. Depending on how the person acts, you can usually surmise that they've had a string of bad relationships, possibly spawning from their birth and with their parents (not all failed relationships spawn from bad parental relationships, you need to use body and mental cues). You can throw in different aspects of their weak personality that have helped to exacerbate their current situation (their failure to see reality, their refusal to acknowledge their own weaknesses), drive home the insult by predicting their next response, or, if you're especially good, their next 3 responses. Make sure they KNOW you can read them easier than a Dr. Seuss book.
People in general do not like the idea of someone knowing them better than they know themselves, it is a very disturbing feeling and pisses people off to know end that they can be more transparent than glass.

Well, seeing as I find nothing productive, useful, or meaningful in pissing someone off, I cannot give you a sure way. Trying to piss someone off intentionally will do nothing but increase your karmic debt, spread bad vibes, and make you a toxic individual which people will begin to avoid.
