I would call this Lady in the photo attached and ask her to walk around the entire inside of the building for an hour and while she was walking to keep Farting as loudly and as smelly as she possibly could!!!

I wouldn’t enter and take my business elsewhere. I wouldn’t give my money nor business to any company that discriminates towards other people. It’s just inconsiderate.

I’d tell myself “I’m not fat, I’m big boned”. Then I’d suck in my gut and waddle on in.
Probably take a picture and post it while tagging the store if possible. Then I would also tag a news agency that was from what I could tell liberal minded and they may get on that story and let this be publically known, that this is a bad thing.
Laugh at it, consider it challenge accepted, and proceed to walk my fat ass right in.

I would want to know their weight limit and I would hate that sign cause most my family and friends are fat or chubby. If they can't go in neither will I.

Reporting it is all you can do legally, take the law into your own hand and you will be fined or depending on what you did might take jail time.
Laws are made to protect you and also protects the criminals then the criminal gets punished according to law. Being a vigilante in 99% of cases is wrong.

I didn´t ignore it, I agree with that point, you can sue and most likely will win but there will still be a high chance in losing since technically it is not illegal, again depending on where you are.

Technically it fits within the definition of discrimination. Just because there isn't a law about weight doesn't mean discrimination suddenly is no longer illegal.
You could argue both points and court and win, all it will take is a better lawyer.

I beg to differ, if a really good lawyer can convince a jury that a murderer should be back on the streets or deserves to take under five years of prison time then winning this case shouldn´t be extremely diffcult for the average lawyer.
Don´t underestimate the power of words and manipulating, it could get you almost everything you want.
