I'm not sure if it's rude. I have a family member who does that and flushes while still talking to them. I find it disgusting

No, like when they called you, you weren't on the toilet. But a few minutes after talking to them, you decide to use the toilet. Not that you're in the middle of peeing while on the phone when you answered the call.
