I have had lovers who call me daddy, and I like it. I don't see it as being their biological father, or as an incest kink (though it could be). It's more that "daddy" represents a strong, loving, person that they can surrender themselves to unconditionally. Even the fact that the word "daddy" is the more childish/informal usage, rather than "dad" or "father", denotes the level of vulnerability. She feels safe. It's her way of saying I'm her hero.My grandmother and grandfather on my father's side used to address each other as "dad" and "mom". When I was a kid, I didn't see it as a romantic gesture so much as it made sense because they had 8 kids, and the kids called them "mom" and "dad", so they were just falling in line with what everyone was calling them. "Go ask mom", or "Go help dad".
As for "daddy issues", I think >50% of people seem to have these, regardless of gender. It's no secret people tend to have a hard time with one or both of their parents, so "mommy issues" and "daddy issues" are really common. It's just more of a meme with girls and their daddies because it got sexualized along with everything in our culture.

When it comes to a relationship though, I've never understood it. I'm not sure if they think it's some cute nickname, a term of endearment or maybe their partner reminds them of their Dad. It has very little to do with the woman. Its about the man. Women in general call a man daddy when he exhibits behaviors of a dad either their own or the one they wish they had. Generally maturity, responsibility, leadership, confidence. I say this as a man who lots of girls have called me daddy, in fact pretty much all of them without exception.
