He would call and text me multiple times a day saying that he loves me and say I'm beautiful, great, etc etc and would gift me sometimes and wish me happy birthday or on holidays... And if he found out I was sick he would come running to see if I was okay...

In the beginning of the relationship he snapped at me and said he wasn't interested in me and that his mom thought I would be a good match for him so that's why he got together with me. So after I read the text I let him go and decided not to care and move on with the situation but then he started to do constant texts and saying I love you etc etc...

Tbh, if you want a clear answer from him, you need to tell him everything you told us, and communicate.

From what I have read, he seems to like you, but the part about him snapping at you, makes me think he is indecisive. So, I think you need a clear answer from him.
