So I joke around a lot in general with everyone.

but I notice a lot that this guy at work has the reddest face ever when I say a joke.

He probably doesn't want to give the impression he is flirting with you by laughing at your jokes etc.

What may have happened in the past if they have been dating for a while, she could be insecure and if he's laughing at all your jokes she may feel offended and think he wants to be with you. Lame, but true.
