Wouldn't you also want to know what the guy does for a living? When starting a potential relationship, hopefully, we take time to get to know all aspects of the person. We want to know if they feel good about and enjoy what they do. We also want to know the person isn't just looking for someone to bleed assets from. By asking this question, it appears you're more interested in a provider than a partner.
There is a big difference between a 35 year old woman who is a waitress and a 35 year old woman who is an RN or an architect.

I think it's because they're trying to put you in a box. It's my personal belief that people are more than what they do "for a living." I could go on and on but I'll leave that as my answer for now.

It's a normal question. You can learn a lot about a person by their job
Curiosity is my guess, or just wanting to make small talk.
To make sure they are not sex workers or scammers but not like they would tell the truth
