it usually goes like this; someone will usually make an off-color comment or joke and if someone gets offended at the joke, then they person who said the joke gets offended that the other person got offended and starts complaining that their free speech is being stifled and how no one can say anything anymore instead of apologizing to the person they offended.
It's kinda like a rejection.
Also, those folks often make those jokes because the values they hold are racist/homophobic/etc - so someone taking offense to their joke registers to the offender as a personal insult because the other person refuses to validate their disgusting and offensive stance.
To people like that, who make offensive "jokes" (really they're comments, because jokes are funny), a rejection of their humour is taken as a judgement against them as a person.

It's because in their mind they like a certain type of humor then everyone should also like that humor. If they like a certain political figure then everyone should. If they like a certain sports team then everyone should. It's self centered, the my way is the only way type of thinking.
I personally don’t care.
my humor is crude, dark and sometimes really messed up and offensive. If you don’t like it that’s fine but I’m not gonna get offended just because someone can’t handle it.
And I’m not gonna change myself just so someone else can feel better. Or not be offended,
Professionals should not be getting offended by anything. Indeed I would say getting offended is not really even an adult behavior.
Control your feelings and recognize just because someone says something doesn't mean you have to agree with it or in most cases even listen to it.

Because a lot people feel like people have gotten so sensitive that they can't take a joke anymore these days.
Because people just can’t handle any confrontation with their beliefs or have any introspection or outside empathy to try and see things from a different perspective
Because they don't think their joke was a big deal, and they don't want other people to spoil what they consider to be fun.
Some people get emotional over anything hoping that others will cater to their feelings.
People like other people being as convenient for them personally as possible. It makes them mad if they're even slightly challenged by the other person.
I'm guessing they're annoyed when someone takes a joke seriously. its a joke
