Why would an ex unfollow you but keep you following them?

He has a new partner and post about them all the time. I’ve just got a new boyfriend and after posting a few pics of us he unfollowed me…do you think it’s related or not?

Yeah, probably. He probably saw the pics and thought "ugh, I don't want to see that" and hit unfollow.
