I do think people are sincere when they say they've enjoyed talking to you, for I certainly am sincere when I make this comment.

Recently I have been doing a lot of travelling, and this scenario happens regularly especially on crowded flights and trains, when passengers sit together instead of on separate seats.

I've had some good conversations with a variety of people, and we usually depart company thanking each other for passing the time together, and making the journey time pass quickly and in a nice way.
