If Muslims dont wear turbines, why does the supreme leader of Iran wear one all the time?

It's a matter of choice. I'm not entirely sure, but men in Islam aren't restricted from wearing anything, they are just required to dress modestly (not over expose their bodies). Turbans are usually associated with Sikhs, but many muslims wear turbans also. Khamenei is not the only known muslim to wear a turban. The leaders of al-Qaida and ISIS, Bin Laden and Al Baghdadi, respectively, both wore turbans. Mehmed the Conqueror and Suleiman the Magnificent often wore a Turban, as well as other Ottoman sultans, the Sultan of Oman wears one, Saladin wore one, the president of iran wears one, Gadaffi wore one and other notable muslims wear/have worn turbans.
Some Christians from Kenya and Tanzania are often seen with turbans.
It's a matter of choice and culture. Turbans are more common in Eastern Iran, Afghanistan and Pakistan, but you can spot muslims from other countries wearing turbans also.

It's convenient wearing this and similar head coverings in a dry and hot climate like in the Middle-east. It protects the head from dangerous UV-rays from the sun, in addition to give a cooling effect. It's not only Sikhs who wears turbans, Muslims may also do it. Both prophet Muhammad and some other prophets wore turbans according to paintings of them. Yes, there exists paintings of Muhammad although Muslims aren't supposed to draw or paint him.
