Flight attendants are often paid only for the time that the doors to the aircraft are closed and people are seated. Is this in any way fair?

Pilots are paid the same way. The way it works is you bid for a line of trips each month, based on seniority. Reserves (non-line holders) are paid a minimum monthly guarantee. Seniority is everything at an airline.
