What's your definition of "truth"?

Truth, to me, is anything factual. If it is something that we cannot prove to be completely factually true, such as global warming, then I'd base my "truth" on what is most likely to be true. In context of climate change, while we cannot absolutely prove that the earth is heating up as a result of human activities, most of the evidence does point this way, ergo for it not to be true, there would have to be many many things that we are mistaken about, and this means that I accept it as truth.

I took a philosophy course on epistemology (defining truth/knowledge) in university I still don't know.

I recall that there are universal truths, like 1+1=2. That's always true for everyone no matter what.

But even seemingly obvious truths like "this is a chair" aren't objective because maybe to a mouse, it's a house.

That's not the same at all.. truth refers to the absolute reality of facts whereas honesty is a quality of being sincere and being able to represent ideas in an accurate, convincing manner.
