Do people not do anything in the beginning of the week?

This irritates the heck out of me. It doesn't matter who I hire, it could be the plumber, a landscaper an electrician. etc. Everyone always wants to come out on a Thursday or Friday the day that I work. Anyone else notice this? Maybe I don't give enough notice.

Probably because the beginning of the week is completely booked for them already and you don't give them enough notice, my mom's boyfriend is a plumber/electrician and the beginning of the week is the busiest time for him. Currently he's doing more plumbing work cause that alone keeps him so busy he usually finishes after 10pm. Plus there are some people who have some shit booked like a month before especially those who are either renovating or building their own houses and the "main clients" who are either small businesses or something so if they happen to have a problem, they are basically the first in the line and the main priority. Its probably different for most plumbers and workers like that but that's how my mom's boyfriend works

If you called me you would have to wait 3 weeks for me to come to your house. After that I'd put you on the schedule whichever day works for you.

With most trades the beginning of the week gets booked in the prior week.

Why don't YOU try working in the beginning of the week so you'd then be free the end of the week when they're available.
