If your innocent of committing the crimes you have been accused of, why wouldn't you fight to prove this? Nick Carter has been doing this, so why don't others do the same?

No , USA / UK legal systems are fought with danger and cost , destroy reputation , and stress the fck out of those involved , I feel sorry for Nick and others quite frankly , people do all sorts of stuff when it comes to money and these situations are never as black/ white as guilty / not guilty , just trying to destroy reputations.
Not all the time it's about destroying reputations. Bill Crosby. He was definitely guilty. R Kelly as well. Many celebrities are truly guilty of the things were accused of.
I feel by settling you are setting yourself up to have more and more speak out. Maybe fighting in court to prove your innocence if you are innocent will potentially stop further false accusations.
Not necessarily. A lot of the time, settling costs less than drawn out legal fees. It's just as easy to make the opposite assumption that the accuser accepting a settlement is acknowledging that their case isn't as strong as they want people to believe, and could plausibly lose the case of formally taken to court.
I'm seeing online a lot of people saying if P Diddy was innocent he would be fighting to prove this in court and not settle. Settling will just leave the door open for others to possibly come forward and make claims as well.
Settling leaves the door open for others to speak out to claim money.
Then it would come down individually whether or not each one is worth fighting in court. If it can be open and shut proven or disproven, then there's no way that either party would settle. If multiple people tried to make the same accusations, then it's significantly more advantageous for the defense to take it to court to shut them all down at the same time, assuming of course that they have a reasonable case. If the accusers have a solid case against the defendant however, there's no way that they would settle for less than they could get in court. This is a major reason why the actual value of a settlement is kept confidential because that would likely tell the real story.
Now specific to P Diddy I don't follow celebrity crap and have no idea what's going on there. Whatever he's doing is absolutely done with consultation from a lawyer, who knows the ins and outs of this stuff better than I would.
Proving your innocence in court keeps the case in the public eye for longer and even if you win a lot of people won't accept the outcome. They hope by ending it quickly public interest will move on to other celebs. There's also the risk other skeletons would pop up in court you'd rather it keep hidden.

Probably, we know they're a bunch of degenerates. It's easier for them to slide someone some hush money, rather than risk a direct PR disaster.
But isn't it a PR disaster if they settle and than other women speak out? People are sitting back waiting for more to come forward about P Diddy. Some are now even questioning why he settled if he was truly innocent. Fighting in court helped Johnny Depp. He definitely wasn't 100% innocent but he proved he didn't do many of the things she had accused him off and he won in court.
If your innocent of the crimes stand up and fight and prove this, this way it could potentially stop further men from being falsely accused.
I think in some cases they don't want a prolonged public legal fight and just cut a check to make it go away. I'm sure sometimes it's they are 100% guilty too, so writing a big check beats prison any day of the week.
