Has anyone else noticed the demographics shifting a lot since they have been alive?

Yea, but more so in some places than others. I've lived a lot of places in the US and there is a pretty big difference from one location to another.

Just as an example, when I was young you NEVER heard anyone speaking a language other than English, unless perhaps they were tourists. The first time I moved to California was around 1983-4 or so. I temporarily stayed in a motel. I used to talk to the maid when she came to clean but she never said anything. After a week it finally dawned on me that she didn't know English. It had never even occurred to me that someone living and working in the US would not know English. That is certainly not the case today.

Locally where I live now, there is not nearly the variety as there is in some states, but there is still a LOT more variety than there used to be.

there’s no way if you put a little effort into learning a language that you can’t eventually be somewhat fluent in it. They must not try at all. Or only mingle with people who speak their language.
