Ooooh.. Tough one. Are we talking about the history of that country or any country that predates it but was from the same area? In which case I think Italy is the most interesting thanks most in part to the Roman Empire.

If we limit ourselves to just the history of that country then... France? They have quite the history. Invading Russia. Stealing the papacy from the Vatican. Their rivalry with England. The world wars. Napoleon. Revolutions, etc..

High highs, low lows. Drama all around and good food and drink to enjoy while going through it. A bit for everyone and many good lessons to learn from (mostly stuff to never ever do because they are stupid).
