As for me I would hide them in the same building & laugh ten years later when some joker in the building finds them.

I'd put them in a typical Louvre trash bag (with a mark on it so that I can identify it later) and add it to the normal Louvre trash. Then, I'd follow the trash truck, stop it, and grab the bag with the jewels.

The hard part would be converting them to cash. It's a shame because they will almost certainly be removing the gems from the settings, destroying the pieces never to be reassembled.
