Unless you're literally a digital minimalist, and you consciously spend effort not using digital technology (and not just avoiding a facebook account) then it's whatever.
But if you're pretending you're something so you don't feel like you're not legit, then that's the real problem. You *are* allowed to just simply not have social media, you don't need to justify it with BS labels.

I'll take a lady like you over any social media addicted girl out there, who gave me no response to my beach invitations on hot summer days. I figure they had more fun browsing instagram at home.

Yes. As digital minimalist has no bearing on social media presence.
I am in charge of an IT department and many IT assets besides. Yet class as a digital minimalist as I only have two phones, 1 laptop and 1 PC. My second has 3 phones, 4 laptops, 2 tablets, a Surface, and all sorts of SMART devices.
It's rather pretentious to use a phrase like "digital minimalist". Just say "I have other priorities" or something similar.
