Ex friend quickly responds to my acceptance text by saying "Hey Beth, how have you been doing lately? Let's hang out sometime!" What?

My friend texted me to say she no longer wants to be friends. I text her back to say that that's fine and thanked her for the good times we've had. She texts me back a few minutes later by saying "Hey Beth, how have you been doing lately? Have you finished painting that picture you were working on? Let's hang out sometime!"

It was as if we had not just been texting each other about her wanting to stop being friends!!! She's never acted immature like that before, so what the heck!

I'm guessing she fat-fingered the previous message, which wasn't intended for you. I did that just yesterday, sent my wife a text that was intended for my daughter. Their names are right next to each other in my contact favorites and my fat finger hit the wrong one.

Was she drunk or joking? If that's something you do with each other. Otherwise it's a bit strange to text back as if nothing had happened. Ask her straight out if she meant it or not.
