Why do some people want what they cannot have?

Because they like to dream about it and hope... But overall, it's the nectar of the greek gods sometimes, wanting to live forever, never die, change into any form, have ability to control other people... I think the greek gods were modeled after human desires that were not possible

Because what we cannot have is often far away, or forbidden, or undeserved.
We humans have this knack about being in the situation that we can have everything but we want and obsess over that one thing we can't have - especially because we can't have it and it's out our reach. This makes that one thing alluring to us.

Personally, I feel like sometimes as human beings we tend to fall for the attraction of the fact that something is restricted or off limits to us. Because it's like a challenge. Almost like the temptation to go somewhere that clearly says keep out or when like when someone tells you not to look at something and you look anyways. It's not always a bad thing but sometimes what we want that we simply cannot have is not meant for us and because we are going off of emotional, mental and possibly physical instinctual instincts to prove we can have what others says we can't that tends to hinder our common sense not paying attention that we probably deserve or need better but are too stuck on that one thing. I can't speak for everyone but from personal experience as to wanting something I simply cannot have that is how my brain worked and as a human sometimes our feelings tend to blind us and make something more than it really should be regardless of a want or something we can't have. It's the temptation of what happens when I get this thing and if you will really be better to have experienced it and hated it, or being able to prove others wrong. But it all really depends on what we're talking about.

That’s not always a bad thing. At one time we wanted to walk on the moon. Because of that desire we are not that for away from stepping down on Mars. They say that some of the greatest inventions come out of necessity. I agree, but I bet just as many great inventions have come from people pushing themselves to be able to get what they want. If we could have it all, nobody would ever have to do anything. No challenge = No desire
No desire = No effort
No effort = we still live in caves and drag our knuckles on the ground.

I think everyone does to some extent. The basis of marketing is fear of loss or fomo.

If we think we will miss out or lose something we are motivated to get it.

If something is scarce or out of reach it immediately becomes more attractive. That's true with potential partners as well.

A little boy goes into a candy store and he is told he can have anything he wants. So he grabs the candy on the first shelf and loves it. But now he wants the candy on the second shelf. He pleads for strangers to grab him some candy. It's difficult. He then sees the candy on the 4th shelf. How on Earth can he get those? I guess it's human nature to have what we can't get.

It’s human nature. Look at Adam and Eve, for example. For some stupid reason god put a forbidden fruit in the garden with them, telling them not to eat it. But at the same time he knew what they would do and made them that way. He set em up for failure then punished them for it.
