If you have a crush on someone and he you heard him talking to your friend and he mentions his ex fiancee as a part of a discussion about culture differences. Will you get upset that he mentioned his ex?

No. If I overheard him talking about her and saying he still has feelings for her or something like that, I would be a bit sad/upset, but in the situation like you have described, no.
