Well it's anyway not something you see "very often", but it can happen.
Normally you shouldn't question the partner choices of the others and if they are in a relationship with a person you wouldn't date, well, they aren't you and they had their reasons to date exactly that person. Most likely they have very different priorities than yours in what they look for in a relatioinship and that's why you can't understand them.
It looks like your priority is checking if the potential partner is hot. That works for you, but that doesn't work for everybody.
If you spotted a gorgeous girl with a really fat partner, well, most likely she saw something in him that others couldn't provide, that could be being like-minded, safety, trust, good communication skills, fun time, passions in common, being humble and understanding, intelligent etc. I'd assume this guy excels in some of these aspects for her, if his looks aren't his strong point.
If you bet all your cards on your looks then you should go for girls who are more for hookups. If you want a relationships then you should work on anything else that is not looks and charm, then if you are also hot, that's surely a plus, but that doesn't grant any successful relationship alone (and people with experiences know that).
(I've been with someone really fat and shorter than me many years ago, we had interests in common, compatible mindset and fun. It didn't last because it turned out he was clingy and needy as hell but still, that was enough to start something with him, for me - and I'm considered very good looking).

I did walk in public with that really fat partner, and I walk around with a series of other weird friends as well, have meals together around etc. This thing of being embarassed is not really a factor for me, unless they start doing something really stupid/bad and that catches the attention, and I am automatically involved...

I do not get it. I would be embarrassed as they are a reflection of me, therefore, their lack of self-care says lots about me being with them. There is a definite personality and character difference. Lazy in appearance then likely lazy in appearance and Results in other areas of life...
