Because when we go on dates we are nice even if we have decided there won't be a second date. What would you have is do? Drop some money on the table and walk out half-way through dinner?

If he is not interested in a second date, I don't think he would try to impress me on things I would react to. Instead, I think he would have a normal conversation.

There's lots of reasons. Probably he isn't over his ex, even though he's attracted to you physically. But emotionally he's attached to his ex.

That's my best guess
