Why do we sometimes like people who we thought we wouldn’t like?

I have a strong preference for younger guys or men who are at the same age. The oldest I’ve dated was 27 I think. And that’s because I am 26 now myself.

So, I like younger guys, however, I recently started talking with that 37 yo and I kind of like him.

It’s unexpected of me because I don’t usually like older men and I mainly feel attracted to the younger ones.

Most people like to think they have an idea of someone who is perfect for them, but then they are surprised by rare attributes they never suspected to be so attracted to. For example, I didn't realize I loved confidence in women so much until I met this confident woman. After all, confidence in women is not talked about as much as in men. I'm sure this guy you're talking also has something that a lot of these younger guys do not have like life experience.
