I almost 98% used to give my real number then block them. Not to be toxic but because I felt very nervous growing up to say no I’m not interested. Much rather, they can have my number knowing I was gonna block them anyways.

What if you were already giving him hints to approach you?
In the extremely rare case that would happen I'd probably decline giving my phone number but might give a way to contact me via social media or like discord if I were into him

I rarely give out my number so it probably would be the same
No, and haven't been for some ten years or so.
You haven't had one in ten years, or you don't like it.
If someone asked for your number on the street, how you react?
I would show them my ring finger and very politely tell them that I'm an extremely happily married woman, wife and mother.
