Is a criminal record a dealbreaker for a date? Now this excludes serious crimes obviously since they’ll likely be spending a lot of time behind bars for something serious. But if someone has gone to jail for a short sentence for something non-violent like shoplifting or fraud, is it necessarily a dealbreaker?
Not necessarily, but it depends on what specifically the crime was, how recent, motivation, etc. Plenty of crimes are committed out of desperation or immaturity, but if it's signal of poor morals, greed, or poor-decision making skills then that's something I'd be hesitant to get involved in. I might need to be convinced he wouldn't repeat the act or something similar in the future, regardless of the circumstances. So it's definitely not ideal and it may very well be a dealbreaker, but I'd at least consider hearing him out.

If it's something they did back in high school, it's not a deal breaker. However, if he just got out a couple of months/ year ago yes, it is.
