What does it mean when a guy says your dating but you aren’t officially boyfriend/girlfriend yet?

So I’ve been talking to this guy for a few weeks now. We have a great connection, compliment each other greatly, hang out and went out a couple of times. He refers himself as my man, and always cuddles me and everything like a normal couple would do. So when I asked what are we I got the statement of that we’re dating but we aren’t officially boyfriend/girlfriend yet, I’m just trying to get an idea of where I need to set boundaries and know when not to over step my role. I can’t get all the nuances down. A woman once told me she would never date a coworker, that was just wrong! We were coworkers, and out to dinner for the eighth or ninth time when she told me that.
