I met someone online. We went on one date but now she doesn't want to continue this because apparently she doesn't feel anything and we'd be better as friends. I feel that one date really isn't enough to get to know someone enough. We had connected really well although it has somewhat weakened since the date but maybe that's because she is busy. Also like the date wasn't bad. Even she said she had a good time. I like her and want her to give this a shot. Is there a way I could change her mind? I mean this in a completely ethical and non-desperate way.

once a woman makes up her mind. that's it
there's no changing of this without making yourself look like the manipulative bad guy
there are many things men can hard work for like a job or studying for an exam or to craft a certain physique or train to win in any competition e. g. sports. working hard for a woman isn't one of them and will backfire even worse
there is no situation of "turning no into yes" that isn't using something dodgy to coerce the change.
How about trying to be the best version of myself and continuing to playfully hint my interest while otherwise just being friends with her and just hoping for the best?
(I have no idea how to do that but just saying)
"playfully" is still trying to force the idea on her. Just doing it in a jokey pitched voice doesn't make it any less cringey or coercive.
