I know what you mean man, girls can be so confusing sometimes. Seems like they always wanna chase after you more once you move on.
My theory is girls subconsciously like the challenge of going after a guy who doesn't seem that into them. Like once they see you happy with someone else, they wanna prove they can steal you away or something. Or maybe they're just bored and want what they can't have now.
It's kinda silly but I guess it makes them feel good to think they can sway you. Don't let it get to your head though - she probably wasn't that interested before for a reason. Now she's just playing games.
I'd cool it with responding to her fast too. Don't wanna send the message you're not over her still. Keep talking to the new girl you like and don't pay too much attention to the other one. Easier said than done, I know. But play it cool and don't mess anything up with the new chick over old ones pulling stunts now.
They can sense that you don’t want them. I personally just like attention. It boost my ego. I might start to show attention when they pull their attention back even if I don’t like them so they can give me attention again and boost my ego but whole time I’m not serious about them.

You don’t have to block her unless she’s being disrespectful or she makes u uncomfortable because you like someone else now. Maybe she does like you and after what you have with new girl is over you can try with her. If she doesn’t like you when you’re no longer with new girl then you know and can stop wasting energy on her
