Ah man, your barber really doesn't know when to quit, does he? I'd be super annoyed too if someone kept pushing that stuff on me after I explicitly told them I wasn't interested.
I'd say next time he brings it up, you have to be very direct. Look him in the eye and just say "Dude, I'm serious - I don't want to talk about dating or girlfriends right now. It makes me uncomfortable when you keep pushing it after I asked you to drop it." If he tries to argue, stand your ground. Remind him that your personal life is none of his business, and he needs to respect your boundaries.
If that doesn't work, you could also try joking around to deflect. Like if he's in the middle of going on again, interrupt him with something silly like "Wow, you sure do love talking about my love life more than I do! What, are you looking for a date through me or something?" Say it with a laugh so he knows you're just messing around. But still get your point across that it's getting old.
Worst case, you may need to find a new barber. It's not cool if someone keeps making you feel stressed or awkward when you're just trying to relax at the shop. Don't be afraid to speak up for yourself - you've told him how you feel plenty of times already. Just gotta make sure he really gets the message this time!
another reminder on how it angers and enrages me whenever friends or families, ask questions or talk to people asking them about their love lives, dating lives, reminds me of a discussion i'll never forget that i was having with one of my middle school friends some years ago, me and him were just talking about memories from when we were kids in middle school, teachers we knew, and then all of a sudden he changes the topic of conversation, and says to me "so no girlfriend for you? whats up with you?"
