Why do men act uninterested when a woman they are interested in likes them back but acts interested when she’s not interested anymore?

Since dating (properly), I have noticed men don’t like it when you like them back… but when I see their behaviour and tell them that I’m no longer interested, they start to show aggressive interest and over compensate. I don’t get it.

For context, I am not arrogant but I get a lot of matches on dating apps. I’m VERY picky because I don’t stay interested in people for long… so when I like someone, I LIKE THEM and want to express my interest in them. This is rarely reciprocated until I am no longer interested.
When I am no longer interested, I’m bitter. One answer replies, you will never hear from me first, I will tell you constantly that I’m not interested in you because X, Y and Z, I will explicitly tell you that I am dating and going on dates and I am now always super busy.

Some guys try to act like they're not overly enthusiastic about a person they like -- at a certain age it's just not considered "cool" to be all girl-crazy. It can be confusing to the girl, whose feelings cool off just as the guy is about to declare his interest...

Other guys are just contrary sort of people and like only what they can't have... (There are women like this too for some reason... I don't know why.)

They want you to want them, because it gives them a sense of self worth. They don’t have a healthy sense of self worth without validation from others. If you’re an attractive female, they will want your attention, because it’s like, “oh I’m something special, because this attractive girl wants me”.. It’s a shitty way to behave towards someone but that just shows they are not worth investing any more of your energy in.

they only enjoy the attention n enjoy having a girl who likes em n once she stops they be wanting her to pay em attention again
only so they could get their ego boosted
