I have the absolute opposite opinion of your theory.
To quote Chris Rock "when men see a woman who's already taken they say I got to get myself a woman like her. When women see a guy who's already taken they say I got to get HIM!"

That may be the initial thought but emotions change that over time from them just "being friends". at least in my experiences from talking and seeing people male and female in those circumstances
