Long story short, I eventually dug up the courage to ask for this girl's number when it felt right which she proceeded to give me. Later that day, I then messaged her to at least pass my number over and she responded 2 days later saying "Sorry, I should have probably warned you how bad I am at texting back, I mostly respond at lunch at work 😄". She pops up as a new contact on snap and already appeared online before then

True. I didn't get to add details to the question originally so I updated it. I do think there some cues that show she probably has boundaries considering we only know each other from work

True, its weird. I feel like I've been given a hint but at the same time I think if she hears it from my mouth that I want to go on a date, whether she refuses or not time is something that can work in my favour. The more time she gets to see who I am, the more likely she will be interested if we still both have our doors open to it. That's the crux of my dilemma.
