Why do restaurants alwayys end up being shi**y places to work?

We keep losing waitresses except 3 of them who do really well. Our kitchen manager quit in a fit of rage today, one of the waitresses broke a Point of Sale system in a rage as well. Cooks always acting so pissy and heated, someone is always in trouble with the law or in jail over BS. I have serious dreams of being a serious cook, but in a better place than where I'm at now. The place I work at now is a casual dining place, but I feel like I could do better if given more creative opportunities.
