I'd vote on staying until you find a new job, if possible. But if it's too hard to search because of the amount of time the current one is demanding, start saving up for a 6 month buffer to cover all your expenses.
Once you've got that, quit, and focus on finding new work. Arrange it so you get a bit of a break between the jobs to recharge and refresh.
If your mental health is suffering, and your financial position allows, quit immediately.

My suggestion would be to use the good money to pay down any debt you have and then perhaps look for a less stressful job, that way you keep your debt to income ratio similar.
You can't have well pay & enough offs.
