What's the professional thing to say to someone who offered you the job and you've accepted but you have another job offer that pays much more?

First, make sure that the new job offer is actually for a better job. You don't want to just go by money. But if you want the new job offer, politely tell the other one that you got a job offer for a job that is a better fit for you. That actually did happen to me when I first got out of college.
You need to be paid what you are worth. If you are being offered more money, simply say, "I received a better offer." Whether or not you want to discuss the terms of the new offer is entirely up to you.

I'm sorry, but I won't be starting as I have received a more attractive offer. That's all you have to say. It's just business. Don't confuse business with personal obligations. If they really wanted you they should have offered a competitive wage.
