Resigned without new job offer. How do I explain this in interviews?

You don’t. Job interviews are a two way street, so if you’re being asked why you resigned without a new job offer, ask your interviewer why they find themselves in need of new employees. Interviews are a two way street and you don’t owe explanations to employers if what they’re asking is irrelevant to the job you’re applying for.
Are you moving elsewhere? Do you have sick family members?
No, nothing like that.
Maybe? The choice was resign or get terminated. My last day will be this Saturday.
You're welcome. And thank you.

This "move up or move out" is just another American nonsense concept...
You might as well be honest with your next interviewers - your old company forced you out. If you need a story: Sabbatical, longer dream vacation, taking care of your health, taking care of an elderly family member...
