When jobs you’ve applied to, reach out to you nearly 2.5 weeks later: what’s your approach?

Say you accepted a different job for less pay and unsteady hours because that’s all that would accept your application. But ur in a small town and don’t want to burn bridges!
(I’m also getting out of road work and going to a simple laid back job indoors, so my work history and skills are not common when applying for completely different lines of employment).

The job I'd applied to but took 2.5 weeks to respond, is that a job I really wanted and thought I could do? If the answer is 'yes' I would take the job given I know I probably wasn't first choice and would apologise to the people at the job I initially took.

When it comes to work you sometimes have to be ruthless, as employers are not shy in being that way also!
