Tell me you haven't played Planescape:Torment without saying you haven't played Planescape: Torment.
Anyway, with Star Wars, you have Vader, the unstoppable 800-lb gorilla, who's a mental and emotional wreck of a human being, essentially enslaved by his loyalty to the man who destroyed him. He's physically and magically (so to speak) very strong, but held back and isolated by the very things that empower him, and the reputation they (and his actions) gave him. A fascinating work of both power and pathos.
But you also have Thrawn, who's so much more directly impressive that I'm not going to go into great detail, so as not to spoil anything. Seriously, go read his trilogy- you won't regret it. I'm told that Disney plans on (or already has) put him in some of their stuff; you probably want to avoid that. They don't understand Star Wars, and they definitely couldn't do him justice; it'd be like them trying to do Claude Frollo.
I kind of have to disagree with you on Maul, though. He was nothing more than an attempt to recapture Boba Fett: intimidating appearance, fancy, agile mobility, and no character whatsoever. He has a grand total of five lines of dialogue to Fett's four, but given how little he actually says, that doesn't add much. He's a force of... well, not nature, but plot, and seems all the more artificial for it.
